Strawberry Kielbasa

Well waiting for a co-worker to meet me for lunch today at Cracker Barrel, I checked out the new fall Gooseberry Patch Cookbook. I came across this really easy to remember Crockpot recipe. 


This turned out to be really good especially when served with mashed potatoes!


Strawberry Kielbasa

3 lbs. Kielbasa - I use the skinless
1 32 oz. jar of Strawberry Preserves

Cut the Kielbasa into bite size pieces, and put into crockpot. Pour Strawberry Preserves over top. Cook on low for 3-4 hours, stir occassionally.

Chocolate Chip Cookie Brownies

I found this recipe on the blog Crazy About Cakes. So easy and delicious!

I made it even easier by using premade cookie dough!


Use your favorite Brownie mix, follow directions on box for preparing, pour into prepared pan. Add spoonfuls of your favorite chocolate chip cookie dough on top of the brownie batter. Bake @ 350 degrees for approximately 30 minutes. Cool completely and top with Chocolate Ganache Recipe.

Chocolate Ganache Recipe
8 oz. Semi Sweet Chocolate (I used semi sweet chocolate chips)
3/4 Cup Heavy whipping cream
2 Tablespoons Butter
1/2 t. vanilla (optional) I would leave out next time. I'm not sure if this is why it took forever to set up.

Bring the whipping cream and butter to a boil over medium heat.  Pour over the chocolate in a bowl.  Cover and let sit for 5 minutes.  Whisk until blended and creamy.  Pour over your brownies, or whatever dessert you are making.  Let it set up and you are good to go.  This recipe can also be used to make chocolate truffles.

I have spent hours working my farm, pictured above. 
I started about 2 weeks ago and I'm already up to level 18. Sad I know.
If only I made my house and campsite look so good!

eeeeeck!

My oven has been ATTACKED!

I made the Smores Banana Nut Bread yesterday... What I wasn't prepared for was the marshmallows exploding or should I say dripping all over my oven.

1st mistake: package of marshmallows melted together.
2nd mistake: putting too many marshmallows on top of bread.
3rd mistake: not putting a cooking sheet under the bread pan.

God Bless America!


We will be spending most of our time at the lake this weekend, so I wanted to share some of the recipes of the food I've planned for the family.

Crock Pot Dip

1 lb. hamburger
1 lb. sausage
1 large jar of salsa
1 can cream of chicken soup
1 large block of velveta cheese

Brown and drain hamburger and sausage put in crock pot. Add remaining ingredients. Heat on low. Stir often. Use your favorite chips and enjoy!


Smores Banana Bread

 

Ingredients:

1 box Pillsbury Banana quick bread
1 cup semi-sweet/white chocolate chips
3/4 chopped walnuts
2 ripe bananas/mashed
handful mini marshmallows

 

Directions:

Preheat over to 375 degrees.
Coat bottom of 9 x 5.25 loaf pan
Prepare quick bread according to directions on box.
add to batter:
1 cup of semi sweet/white chocolate chips
3/4 chopped walnuts 
2 ripe bananas
Bake approximately 45 to 55 minutes and when toothpick inserted comes out dry.
Last 5 - 10 minutes add handful of mini marshmallows to top of bread to melt/brown.
Let cool and serve.
Drizzle chocolate syrup on plate, place slice of banana bread and add a few chocolate chips and mini marshmallows.

A quick delicious and easy dessert with most ingredients on hand. Enjoy!!
