The Weekends Almost Over!

Why does it seem that weekends go so fast?

Friday Night:

Joel made us a surprise visit for the weekend! It's always great to have him home... Only 3 more weeks and he'll be home for the summer! This year has really flown by! Only 1 more semester and he'll be finished with college!

Saturday:

Picked up Vickie early in the morning to head to Pennsylvania to meet Linda & Stacie, (2 of the great girls I talk with on GLU). Had a great lunch at Old Mexico....Yes Kelley, I did have Mexican!

Then off we went to the stores around Cabela's. We had fun shoppping for new body lotions and body sprays. We had fragrance sprayed up our arms, wrists, tops and palms of our hands. By the time we were done we couldn't tell one from the other!

My choice was Philophys Amazing Grace. I loved it.... Erica got me the lotion last week, so of course I had to purchase the spray.

Sunday:

The morning started off taking my mom to church. Then home to make dinner for Joel before he headed back to college. Of course what I had in mind and the recipe he found for me to make were'nt the same. But hey Joel, when you come home they'll be a surprise waiting when you come the next time!

I chose to make: Nothing fancy just good!



Beef Stew & Dumplings


Ingredients:

2 lbs. stew meat

Vegetable Oil

1 small onion - diced

1 bag baby carrots - chopped

12-15 red potatoes - peeled and cubed

2 Tablespoons flour

2 Cans Cream of Mushroom Soup

Salt & Pepper to taste



Direction:

Brown stew meat onion in vegetable oil. Add 8 to cups of water. Cook over medium heat for 1 hour. Add carrots and celery, cook for 1 hour. Add potatoes cook until soft, approximately 1/2 hour. Tak out 1 cup of broth and add small amount of flour at a time stirring constantly. It should be gravy like, if it appears to be too glue like add more broth. Try not to get too many lumps. Pour into stew. Add 2 cans of Cream of Mushroom soup, Salt and Pepper to taste.


Add Dumplings:

Ingredients:


2 cups of Bisquick

2/3 cup Milk


Directions: ( Follow directions on box of Bisquick)


Mix Bisquick and Milk together. Drop by spoonfuls on top of stew. Cook 10 minutes uncovered and cover for 10 minutes. Reduce heat so stew does not stick to pot.

It's Dieting Season Again!

Last year at this time, I was dropping pound after pound! Then come December, Christmas, New Years, Presidents Day etc. Something went drastically wrong! Everything I saw I wanted to eat! It was like something inside me was rebelling! Ok, I've got to get a handle on this and start walking again, dieting again and fitting into all those clothes I bought, when I lost the weight!

Bob decided it was also time! He's way better sticking to a diet then I am! His will power is way too strong!

Why is it when I start a diet, I do my best baking! For some reason I love to bake when I'm on a diet. I've shared this recipe with most of you. This is a really good recipe! Kinda reminds you of pumpkin roll without the filling.

WW Pumpkin Muffins - 2 points each.
1 box spice cake mix
1 small can of pumpkin
2/3 cup water
Mix together until creamy. Line muffin pan with cupcake papers. fill 3/4 cup full with batter. Bake at 350 degrees for 20 minutes.
